Under the Sodexo umbrella 9 months spent working alongside a great team at a local unit geared around the production of patisserie mindful of carbon impact and other environmental factors. In a world where foods are full of artificial ingredients, palm oil and many other harmful substances it is an inspiring challenge to turn the “normal” into what I believe will be the future .

Forest Green Rovers Fires Up Devil’s Kitchen

A quite brilliant project bringing plant based foods into the school sector all free of the 14 major allergens. When not in the development kitchen working passionately on improving and creating new flavor concepts, we traveled the country working alongside county councils and schools directly show casing the product. The real taste, the customers themselves cooking delivering the future of food to younger generations, serving up a very different school meal that many were used too. The brand The Little Green Devils goes from strength to strength in a very competitive market place.

Theobroma Cacao Raw Food Demonstration @The Ecotricity Head Quarters

A fantastic afternoon demonstrating the simplicity that is raw plant based foods at the head office of the groundbreaking company Ecotricity, leaders in the field of sustainability in sport & renewable energy.


Theobroma Cacao is a venture created shared with my wife. We organise our pop up vegan restaurant while show casing how good food can be plant based, reducing the huge carbon footprint our profession leaves on our world. We attend events around the UK from public demonstrations, farmers markets and most recently moved into designing and baking planet friendly special celebration cakes.

Some of our handmade raw cakes including the popular vegan non-creme egg and caramel shortbread. The market stall was opened mindful of showcasing desserts can hold nutritional value removing all refined sugars and even adapting recipes making all produce gluten free.


It was a real pleasure working alongside the team at the Queens Hotel, in particular Head Chef David Gent whom we have worked together multiple times on various projects and events. Below are a few pictures from the Afternoon Tea launch where we created a very traditional affair in keeping with the history of the Hotel and the authenticity introduced in England by Anna, the seventh Duchess of Bedford, in the year 1840.
