Kale Soup

SERVINGS:

4 x Adults

INGREDIENTS:
  1. 1400ml Stock
  2. 1 x Chopped Red Onion
  3. 2 x Peeled & diced Sweet Potatoes
  4. 1 x Chopped Celery Stick
  5. 2 x Chopped Garlic Cloves
  6. 200g Cooked Beans of Choice
  7. 1/2 x Tsp Hing
  8. 1/2 x Tsp Ground Black Pepper
  9. 1 x Inch Piece of Very Finely Chopped Fresh Turmeric
  10. 1 x Inch Piece of Very Finely Chopped Ginger
  11. 150g Chopped Kale
  12. Lemon
  13. Nut Crumble
METHOD:
  • Add ingredients 1,2,3,4,5,6,7,8,9,& 10 into a deep pan & bring to a simmer for 20 minutes
  • Next add the chopped Kale leaves, simmer for another 15 minutes
  • Take of the heat and liquidise until smooth
  • Serve by finishing with some freshly squeezed lemon juice over the top & some nut crumble.
