My relationship with food has been a fascinating experience, being my passion & seeing that I dedicate the most part of my life to cooking in some of the best hotels & restaurants in Britain over the last two decades. I have gone from being a full-time carnivore to a raw fruitarian. Being conscious & now imbalance with my own natural rhythms I have witnessed phenomenal states of health, feeling the best I have ever felt.
The healing system of Ayurveda teaches that we each have a unique mind-body type, known as our dosha, that guides how we look & feel when we’re healthy. Since our individual state of health and balance is different from everyone else’s, the perfect weight for each of us will vary, & no single dietary regimen will be appropriate for everyone.
According to Ayurveda, by understanding our true nature, strengthening our connection to ourselves, & living in balance with our natural rhythms, our perfect weight is revealed. This knowledge doesn’t come from an external source but comes from within each & every one of us. Once we understand this, we can begin to listen to our inner intelligence & engage in practices that strengthen our mind-body-spirit connection & lead us towards the weight that is ideal for us.
The two main guiding principles of Ayurveda are the mind and the body is inextricably connected, & nothing has more power to heal and transform the body than the mind. Freedom from illness depends upon expanding our own awareness, bringing it into balance, & then extending that balance to the body. This process is not as complicated as it may sound. For example, when you meditate you effortlessly enter a state of expanded awareness & inner quiet that refreshes the mind restoring balance. Since the mind & body are inseparable, the body is naturally balanced through the practice of meditation. In the state of restful awareness created through meditation, your heart rate & breath slow, your body decreases the production of “stress” hormones such as cortisol & adrenaline, & you increase the production of neurotransmitters that enhance wellbeing, including serotonin, dopamine, oxytocin, & endorphins.
With the embers still burning, I am in the continual process of putting together some of my favourite raw recipes, perhaps supporting any transition readers might be undertaking themselves. The dishes shared are created using only the best natural ingredients available, using quality ripe fruit & vegetables allows the recipes to be free of any additional sugars & salt, this ensures the best possible flavour without stimulants being added. During the seasons where we experience a decrease in quality, I use my own ripening system at home which allows the cultivation of the ingredients to my preferred state before usage.
